Many of us are now enjoying the warmer weather across the country, and with summer just around the corner, we can only expect the days to get brighter and hotter. This means more time spent playing with the kids in the park, days out at the beach, and more of us choosing to fire up the barbecue at dinner time.
Here at Wearable Imaging we have brought to you three of our favorite summer barbecue recipes, each of which are guaranteed to wow your friends, and can be easily prepared in less than 30 minutes. This is just in time for Father’s Day and Graduation parties. Take a look and try one of these barbecue recipes out this weekend!
BBQ Chicken Burgers
First prepare your sauce and marinade by mixing 4 tbsp of ketchup, brown sauce, 2tbsp of clear honey and 2 crushed garlic cloves. Slice half way into the chicken breast and open it like a book, before leaving in the bowl to marinate for as long as you would like.
Barbecue the chicken for around 10 minutes, making sure to turn it regularly. This will make sure that the chicken is cooked through evenly, and remains sticky and crispy rather than burnt. You could cook several rashers of bacon at the same time for an extra kick, otherwise serve the burgers in buns or on their own.
Sweet Potato Salad
Peel 2.75 pounds of sweet potatoes and cut into large chunks, before coating with olive oil and seasoning. Place on a tray lined with tin foil, and roast in the oven at 400 degrees Fahrenheit, either for 35 minutes or until tender and golden.
Allow the potato chunks to cool, and make the sauce by whisking together 2 finely chopped shallots, 4 sliced spring onions, 5 tbsp sherry vinegar, 2 tbsp extra-virgin olive oil, and 2 tbsp honey. Gently mix in the potato chunks to complete the dish, using your hands to avoid breaking them up.
Mexican Corn on the Cob
Soak the corn cobs in cold water for 15 minutes, then place directly onto the bars of your preheated barbecue. Turn regularly and cook for 30 minutes, or until the corn is tender but charred in places. While cooking, mash 7 Tbsp of butter with the zest of 1 lime and 2 tsp of chopped fresh chili. Coat the corn cobs with this butter once they are finished cooking.
